chicken vindalooThis is a famous Goan recipe. Its very yummy and spicy.


1.Chicken boneless – half kg

2. Dried red chilli – 10 no

3. Cardamom – 2 no

4. Clove – 3 no

5. Cinnamon- one stick

6. Pepper corns – 4 no

7. Cumin – one table spoon

8. Star Anise  (Thakkolam)- one

9. Turmeric powder- half table spoon

10. Onion- two

11. Ginger-Garlic paste- one spoon

12. White vinegar – two spoon

13. Grated Jaggery/ Brown sugar- one tblsp

14. Oil- as required

15. Curry leaves – One sprig

16.Salt- as required



Clean chicken well.  Heat oil in a pan. Add the whole spices  2-9. lightly roasted.  Keep aside. Make it fine paste. Marinate the chicken with this masala paste and little salt. Keep aside 4-5 hours. In the same oil add onion. ginger-garlic paste. Saute well. Roast well. Keep aside. Make it fine paste.  Heat oil in a pan add the onion paste, turmeric and curry leaves. Saute well. Add the chicken .Mix well. Check salt. Add one cup of water. Add vinegar and jaggery. Mix it. Cook well. Make it thick gravy.  Add curry leaves. Switch off. Serve with rice /Rotti.
