Hummus (Arabic Dish)


Chickpeas – 2 cup
Tahini paste – 2 tablespoon
Fresh lemon juice-2 spoon
Garlic clove-1 big
Olive oil-2 spoon
Cold water-4 spoon
Paprika powder- one tablespoon (for garnish)
Salt – to taste

Soak chickpeas for at least 8 hours. Wash it well. In a food processor ( I used mixer grinder) take the bowl of a food processor and combine lemon juice and tahini paste (Tahini is available in the supermarket) and grind for a while. Add olive oil and chopped garlic into this bowl.

Add a little pinch of salt and grind for 20 seconds. Add chickpeas and cold water into this and grind for 2 to 4 minutes well. If any bit of chickpeas is there, grind another 2 minutes until you reach a good consistency. Check salt and add if needed.

Then transfer the paste into a bowl. Sprinkle paprika powder and drizzle of one spoon olive oil and garnish with mint leaves. Keep it in an airtight bottle in the fridge up to one week.
